  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups uncooked pasta (like rotini or penne)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Bread bowls (for serving)
  • Fresh basil for garnish (optional)

Instructions
 

Preparation

  • In a large pot, brown the ground beef or sausage over medium heat. Drain excess fat.
  • Add the diced onion and minced garlic, cooking until softened.

Cooking

  • Stir in the crushed tomatoes, broth, dried herbs, salt, and pepper. Bring to a simmer.
  • Add the uncooked pasta and cook according to package instructions until al dente.
  • Stir in the ricotta cheese until well combined.

Serving

  • Ladle the soup into bread bowls and top with mozzarella cheese.
  • Serve hot, garnished with fresh basil if desired.

Notes

For a thicker soup, reduce the amount of broth or add more pasta. Feel free to customize the vegetables by adding spinach, bell peppers, or mushrooms for added nutrition. You can use different types of cheese like Parmesan or provolone for flavor variations.
