Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger

Wet Ingredients

  • 1/2 cup honey
  • 1/4 cup butter, softened
  • 2 pieces eggs
  • 1/4 cup orange juice Freshly squeezed for best flavor.
  • 1 tablespoon orange zest

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a muffin tin or line it with paper liners.
  • In a bowl, whisk together the flour, baking powder, baking soda, ground ginger, and salt.
  • In another bowl, cream together the butter, honey, and sugar until light and fluffy.
  • Beat in the eggs, one at a time, then stir in the orange juice and orange zest.
  • Gradually mix in the dry ingredients until just combined.
  • Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.

Baking

  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool, then serve with a drizzle of honey or a dusting of powdered sugar.

Notes

To store Orange Ginger Honey Cakes, place them in an airtight container. They will stay fresh at room temperature for about 2-3 days. If you want to keep them longer, you can refrigerate them for about a week or freeze them for up to three months.
