Fruit Layers

  • 1 cup mango puree Fresh or store-bought pureed mango.

Preparation

  • In a bowl, combine chia seeds, almond milk, honey (if using), and vanilla extract. Mix well and let sit for about 10 minutes, stirring occasionally until it thickens.

Assembly

  • In serving cups, layer chia pudding, mango puree, and fresh strawberries.
  • Repeat the layers as desired and finish with strawberries on top.
  • Refrigerate for at least 2 hours or overnight.

Serving

  • Serve chilled as a healthy breakfast or snack. Optionally, add a sprig of mint or a drizzle of honey on top.

Notes

Leftovers can be stored in an airtight container in the fridge for up to three days. Mix well to avoid clumping and adjust sweetness to taste. You can vary the fruit or add yogurt for creaminess.
