  • 2 pieces chicken breasts, diced
  • 1 piece butternut squash, peeled and cubed
  • 1 cup cooked chestnuts, chopped
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as thyme or parsley) for garnish

Preparation

  • In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  • Add the diced chicken breasts and cook until browned.
  • Stir in the butternut squash and chestnuts, cooking for a few minutes.
  • Pour in the chicken broth, bring to a boil, then reduce heat and simmer until the squash is tender.
  • Stir in the heavy cream, season with salt and pepper, and cook for an additional 5 minutes.
  • Serve warm, garnished with fresh herbs.

Notes

Make sure to dice the chicken and vegetables into even pieces so they cook uniformly. You can adjust the thickness of the stew by adding more or less chicken broth. For a different flavor, consider using pumpkin instead of butternut squash.
