Ingredients
  

For the crust and topping

  • 1 3/4 cups all purpose flour
  • 3/4 cup sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter (cold) Ensure the butter is cold for a better crumble texture.
  • 1 medium egg (whisked)
  • 2 tbsp milk (any kind)

For the cherry filling

  • 2 1/4 cups fresh cherries (pitted) You can use frozen cherries, but thaw and drain excess moisture.
  • 3 tbsp sugar Adjust based on tartness of cherries.
  • 2 tbsp cornstarch

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine flour, sugar, baking powder, and salt.
  • Cut in cold butter until the mixture looks like coarse crumbs.
  • Stir in the whisked egg and milk until well combined.
  • Take half of the mixture and press it into the bottom of a greased baking dish to form a crust.
  • In another bowl, toss the pitted cherries with sugar and cornstarch.
  • Spread the cherry mixture over the crust in the baking dish.
  • Crumble the remaining dough mixture on top of the cherries.

Baking

  • Bake for about 30-35 minutes or until the top is golden brown.
  • Let the bars cool completely before cutting into squares.

Notes

Serve bars warm or at room temperature. They can be enjoyed plain or with a scoop of vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to one week or freeze for longer storage.
